Dave’s Muy Delicioso Green Chile Chicken Enchiladas


2 whole chickens
1 onion
1 tablespoon garlic powder
2 tablespoons salt
1 chicken bullion cube
2 cans cream of chicken soup
1 can cream of mushroom soup
1 13 oz. container of Bueno Autumn Roast green chile
1 14 oz. container of extra hot green chile
2 pounds grated cheese (cheddar, co-jack, muenster…mix them up)
corn tortillas
oil to fried tortillas

1. Cook chickens for 45 minutes in a large pot of boiling water. Add onion, garlic, salt, and bullion.
2. When chicken is fully cooked, remove the meat from the bones.
3. Add chicken meat, 2 cups of chicken broth (skim the onions out and add them as well), soups and chile. Mix together and heat on low for about 15 minutes.
4. Put the tortillas one at a time into boiling oil for just long enough for them to become soft. Line a 9 x 13 baking dish with them. Heat enough tortillas to add 2 more layers in the dish. You will heat about a dozen tortillas.
5. Layer chicken and cheese on top of tortillas. Add another layer of tortillas and then chicken and cheese. Add one more layer of tortillas and sprinkle cheese on top.
6. Heat in a 350 degree oven for 30 minutes.
