Crockpot Chicken Cacciatore


 

1 pound boneless, skinless chicken thighs, fat trimmed and cut into 1-inch pieces
14-1/2 ounce can crushed fire-roasted tomatoes
1 cup sliced mushrooms
1 cup chopped onion
1 medium green bell pepper, cut into strips
2 cloves garlic, minced
1/4 cup dry red wine or chicken broth
1 Tablespoon tomato paste
3/4 teaspoons dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Place all ingredients in a 5 or 6-quart slow cooker; stir well.  Cover and cook for 4-5 hours on high, or 6-7 hours on low.  Serve over hot, cooked pasta, like penne.  Serves 4.
